Behind every dish

Mauricio Leal

My cooking begins with a simple idea: cook what I love to eat. I start with Mexican flavours, make them my own and let the season lead the way.

My path took me from Puerto Vallarta to Paris and back to this coast. I trained at Ferrandi and worked in kitchens including Café des Artistes and Four Seasons Punta Mita. In 2017, I opened ICÚ.
